or maybe entertaining some low carb friends? Then, here's a delightful alternative
– make asparagus beef roll-
These cute little beef rolls are a breeze to make and great tasting. You can put them together at the last minute or make a batch ahead.
What's more, these tantalizing appetizers are really inexpensive and they resemble sushi without the carbs! So, if you want to dazzle your friends and be the star of the party, grab this recipe now!
(serves 4)
Ingredients:
1 pound center-
8 stalks asparagus, cut into strips
1 carrot, cut into strips
8 green onions, white part only and cut into same length as beef
3 tablespoons olive oil
2 tablespoons white wine
3 tablespoons Worcestershire sauce
3 tablespoons water
3 tablespoons sugar
8 toothpicks
Place asparagus in a saucepan of boiling water with a pinch of salt; blanch for about 1 to 2 minutes. Likewise for the carrot but for a slight longer time.
Spread beef on a clean work surface; place asparagus, carrot and green onion on top of beef and roll it up. Roll the beef very tightly to prevent fillings from spilling. Use a toothpick to pierce through and fasten.
Heat oil in skillet, place beef rolls and fry. Add white wine and water. Cover for a short while, add Worcestershire sauce and sugar.
Remove beef rolls and cut into bite-
Carefully pour remaining sauce into a gravy boat and serve with beef rolls.
