It's three in the afternoon, lunch is a distant memory and dinner seems miles ahead. You feel sluggish, you crave for something, just anything – chocolates, cookies, chips or all of them – to get through the mid-afternoon slump. Is that you I'm talking about? Well, afternoon snacking is not as bad as it seems. In fact, snacking can keep energy level high and your mind alert, if you eat healthy snacks.

 

Here's a healthy snack recipe to help you resist the vending machine when you're at work or at school, or avoid that wicked pint of double-fudge chocolate ice cream in the freezer.

 

It's easy to make, full of nutrients, no sugar, no fat, delicious and equally satisfying! You can also serve them with a dollop of low-fat yogurt as healthy desserts!

Baked Apples Stuffed with Golden Raisins and Almonds Recipe

(serves 2)

 

Ingredients:

2 granny smith apples

½ cup fresh orange juice

1 tablespoon lemon juice

2 tablespoons golden raisins

2 tablespoons chopped almonds

¼ teaspoon ground cinnamon

 

 

How to bake apples

Combine orange juice with lemon juice in a cup; set aside.

 

Peel and core apples; pour orange/lemon mixture over to prevent oxidation.

 

Mix raisins, almonds and cinnamon in a bowl. Spoon into the cavities of apples.

 

Place stuffed apples in an oven-proof baking dish; bake at 350˚F for 20 to 30 minutes, or until a fork pierces surface easily. Enjoy warm or cold.
