Here's a recipe which my kids love and keep coming back for more! This broccoli and salmon bake is extremely quick and easy to prepare. It's a yummy way to get kids eat fish and at the same time, sneak in some veggies. So, whip up this dish for your kids tonight and watch the magic!
(serves 2)
Ingredients:
4 ounces penne
4 ounces broccoli, cut into florets
salt and pepper, to taste
½ ounce butter
½ ounce flour
1½ cup milk
½ jar red pesto
½ cup grated cheese
2 pieces salmon fillets
Place pasta in a pot of water and boil for about 6 minutes.
Add broccoli florets and boil for another 4 to 5 minutes; drain.
Place butter, flour and milk in a large saucepan and heat, whisking continuously until it thickens to make a smooth sauce. Stir in pesto.

Bake in a 375°F for about 30 minutes or until it's golden and bubbly at the edges. Any longer than 30 minutes, the fish would be overcooked.
