Candied Pumpkin in Brandy Syrup

The fall season brings to mind many delicious pumpkin desserts, and to celebrate the sweet flavors of America's favorite squash, here's a sinfully rich pumpkin dessert with a grown-up twist – pumpkin pudding enhanced with cherry brandy and lightly spiced with candied ginger. This easy make-ahead dessert simply adds a luscious ending to your Thanksgiving dinner.

Candied Pumpkin in Brandy Syrup Recipe

(serves 6 to 8)

 

Ingredients:

2 cups water

½ pound pumpkin or acorn squash

salt, to taste

½ cup raisins

20 maraschino cherries

½ cup sugar

5 tablespoons cherry brandy

1 cinnamon stick

4 pieces candied ginger

whipped cream

 

 

How to make candied pumpkin

Prepare the pumpkin using a large, heavy knife and make sure to remove any string bits. Next, cut pumpkin flesh into 1-inch lengths.

 

Place pumpkin and all other ingredients except cherry brandy and whipped cream in a wide saucepan. Cover tightly with a lid and cook over low heat fr about 15 minutes, or until tender.

 

Chill thoroughly and then pour cherry brandy just before serving. To serve, pipe whipped cream over. Enjoy!
