When I mention salads, most people automatically think of huge piles of greens drizzled with dressing. But have you ever thought out of the box and make your salad red? Well, if you're tired of the same old green salads, why not try this out – carrot egg salad topped with a good handful of walnuts?
It has a good combination of fiber, protein, good fats and crunch....delicious! Because carrots are naturally sweet and vibrant in color, a carrot and egg salad is the perfect solution for moms with kids who don't like or eat veggies. As this salad is very easy to make, it's also great for busy people with little time in the kitchen.
(serves 4)
Ingredients:
2 large carrots, peeled and thinly sliced
4 hard-
2 tablespoons mayonnaise
2 tablespoon yogurt
1 teaspoon sweet chili sauce
½ cup walnut, chopped
salt and pepper to taste
Place carrots, eggs, mayonnaise, yogurt and sweet chili sauce in a large bowl. Mix well to combine. Toss in walnuts. Season with salt and pepper taste. Done!
You can eat the salad on its own or use it as spread on bread rolls. And, for variation, toss in pecans, sunflower seeds, poppy seeds or anything that rocks your boat!
