I love making broccoli bites and healthy snacks for the children, and this is a nice easy recipe that I want to suggest if you've little time in the kitchen and little bellies are grumbling – make cheesy zucchini bites!
These cute zucchini bites are really delicious; even my picky eaters love them! You can also serve them as party appetizers or as quick snacks. The feta cheese explodes in your mouth with its delightful flavor and rich aroma.
The best part of cooking Zucchini is that you don't have to peel the skin since it's edible; so you get the added benefit of fiber. But if it feels gritty, gently scrub it with a soft vegetable brush under running cold water to clean.
I use only salt and pepper to season because the kids prefer a milder taste, but you can add 1 teaspoon dried basil and ¼ teaspoon chilli powder to kick things up a notch or two.
Ingredients:
2 medium zucchini
1 egg
1 teaspoon coconut oil or olive oil
½ cup white wheat flour
2 chopped scallions
1 teaspoon parsley
3 teaspoons crumbled feta
2 tablespoons grated Parmesan cheese
salt and pepper to taste
1. Wash zucchini, and cut both ends off.
2. Coarsely grate the zucchini. Place on towels to release some of the moisture.
3. Meanwhile, combine egg with oil, flour, herbs and feta cheese in a bowl. Whisk all ingredients together.
4. Stir in grated zucchini, and add seasoning to taste. Mix well.
5. With a tablespoon, scoop up tablespoonful of zucchini mixture onto a baking sheet.
6. Sprinkle with Parmesan cheese.
7. Bake at 400˚F for 25-
