Quick Easy Dinners! Chicken and Broccoli in Mushroom Sauce

When you're tired and hungry, the last thing you want to do is to labor in the kitchen. A dinner cooked in minutes can be as appetizing, attractive and nutritious as that cooked for hours.

 

Today's recipe features chicken and broccoli in cheesy mushroom sauce. Chicken is great because it's easily obtained, stores well in the freezer and cooks quickly. A few other simple ingredients is all it takes to liven up the dish and render the chicken fragrant.

 

This is a super easy quick-cook meal recipe that takes no more than 30 minutes to make and sure to impress the whole family without much effort!

Chicken and Broccoli in Cheesy Mushroom Sauce

Ingredients:

2 tablespoons olive oil

1 pound boneless chicken, cut into bite size pieces

1 onion, chopped

½ cup mushrooms

1 can cream of mushroom soup

2 tablespoons milk

1 tablespoon sherry

1 cup broccoli florets

½ cup Parmesan cheese

 

How to make:

Heat oil in a skillet, cook chicken until brown. Add onion and mushrooms; cook until tender.

 

Add cream of mushroom soup, milk, sherry, broccoli, and cheese. Cover and allow to simmer over low heat for about 10 minutes.

 

Serve with pasta. Enjoy!
