Don't you agree that just the thought of cucumber make you feel cool instantly? Imagine yourself under the blue tropical sky of Sun Island in Maldives, on soft white sands, dipping your toes in crystal clear waters, sipping a glass of refreshing gin and cucumber cooler.... Let’s get back to cucumbers!
Although cucumber does not provide great nutrition like pumpkin, zucchini and other squashes, cucumber is, nevertheless, an ideal summer cooling food.
Cucumber contains a lot of water to keep your body cool and refreshed. And, being a diuretic, cucumber helps to flush toxins out of your body for healthy tissue and skin maintenance.
In fact, you can find a plethora of lotions, creams, cleansers, toners, soaps and facial masks with cucumber extract available in stores or online.
As for you guys watching your weight, you've nothing to worry about the caloric content of cucumber. You can eat all the cucumbers you want without guilt – cucumber has minimal sugar, carbs and virtually no fat – just 16 calories in 1 cup sliced!
In our family, whenever we have a barbecue party in the backyard, a huge bowl of chilled cucumber salad is never missing from the table. This salad is very light and refreshing; just perfect for a hot summer day. What’s more, it’s also very easy to make.
To serve 6 people, you'll need these ingredients:
3 cups thinly sliced cucumbers
1 teaspoon Kosher salt
2 cups thinly sliced Vidalia
onions
2 cup cherry tomato halves
½ cup distilled white vinegar
½ cup water
2 tablespoons
sugar
1 teaspoon dill weed
½ teaspoon freshly cracked pepper
dash cayenne pepper to
taste
How to make cucumber salad:
Put all the cucumber slices in a large glass bow and sprinkle with salt.
Next, combine the remaining ingredients except onions and cherry tomatoes in a small glass bowl and whisk.
When it's well combined, pour over cucumbers, onions and tomatoes. Give it a light toss and refrigerate overnight.
Viola, you're done.... Remember, to stir the cucumber salad lightly before serving. Our family loves this salad and I trust yours will love it too! Enjoy......
