Summer Salad Recipes! Chilled Red and White Cabbage Salad

There's so much talk about what cabbage can do for you – from its ability to inhibit the growth of cancer cells to its role in weight loss, the humble cabbage is full of nutritional goodness inside out. And, did you know that shredded cabbage, apart from ending up in coleslaw, is as tasty when lightly tossed with red wine vinegar and chilled?

 

This Asian-inspired crunchy red and white cabbage salad is super easy to make, refreshing, low calories and not to mention, low fat. In terms of color, texture and flavor, this sweet and tangy cabbage salad is a wonderful companion to grilled meats.

 

Chilled Red and White Cabbage Salad

(serves 4 to 6)

 

Ingredients:

½ head of whole red cabbage

1 head of whole white cabbage

4 tomatoes

1 green pepper

12 tablespoons red wine vinegar

4 tablespoons olive oil

1 teaspoon sugar

1 teaspoon dried basil

soy sauce and pepper, to taste

 

 

How to make cabbage salad:

To remove coarse stem and also to make peeling easier, cut off cabbage bottom. While you can certainly use the slicing or shredding disc of a food processor to make your fresh cabbage head into slaw-like shreds, I prefer to cut by hand as this will result in slightly larger and less uniform pieces, which in turn will make this more like salad than coleslaw.

 

Next, chop tomatoes and cut green pepper into thin strips. Set aside.

 

Bring a pot of water to a boil, blanch the shredded red cabbage for 3 to 5 minutes and drain well. Place in a large bowl and add red wine vinegar. Cover and marinate for about 1 hour.

 

Place shredded white cabbage, olive oil, sugar, dried basil in another large bowl and season with soy sauce and pepper to taste. Top with marinated red cabbage, green pepper strips and chopped tomatoes.

 

Refrigerate for about 1 to 2 hours but take it out occasionally and re-toss to make sure the dressing hasn't pooled on the bottom of the bowl. Enjoy your cabbage salad!
