With so many things to be done in a short time, Christmas can indeed be stressful for many of us. There are holidays gifts to get, grocery shopping to do and Christmas cookies or sweets to bake.
And, talking about Christmas sweets, wouldn't it be fabulous if they are fancy to look at but require minimal effort to make? Better yet, no bake at all!
Well, if that is what you are hoping, here is the perfect recipe for busy people. These chocolate marshmallow balls are cute, incredibly quick (less than 15 minutes) and easy to make – even the kids can help out too! So why not make a huge batch, pack them in pretty jars as delicious gifts for loved ones and friends?
(makes 14):
Ingredients:
150 grams butter
2 tablespoons baking cocoa, sifted
½ cup brown sugar
1 can condensed milk
1½ teaspoons vanilla essence
2 cups plain sweet biscuits, finely crushed
14 mini marshmallows or 7 marshmallows*
desiccated coconut
Place butter, baking cocoa, sugar and condensed milk in a medium saucepan, heat until butter and sugar just melt and the mixture is smooth. Remember to stir mixture constantly.
Remove saucepan form heat; stir in vanilla essence and biscuit crumbs.
Mix well and leave until mixture is cool to handle.
Using wet hands, shape a spoonful of mixture around each marshmallow to form a ball. Then roll in desiccated coconut. Repeat with remaining mixture.
Place chocolate marshmallow balls on a lined baking tray and refrigerate until firm. Store in an airtight container in the fridge until ready to serve.
* Use a pair of wet scissors to help you cut the marshmallows.
