Have you heard about Alicia Silverstone's new book, The Kind Diet: A Simple Guide to Feeling Great, Losing Weight, and Saving the Planet? In her book, Alicia Silverstone shares her diet secrets and vegan recipes, and there's one particular recipe which I’m really crazy about – vegan chocolate peanut butter cups.
They're really easy to make, no baking required and not to mention, insanely delicious! Here's the chocolate peanut butter cups recipe excerpted from The Kind Diet book.
(makes 12)
Ingredients:
½ cup vegan butter
¾ cup crunchy peanut butter (preferably unsweetened and unsalted)
¾ cup graham cracker crumbs or 10 graham cracker squares*
¼ cup maple sugar or other granulated sweetener
1 cup grain-
¼ cup soy, rice, or nut milk
⅓ cup chopped pecans, almonds, or peanuts
1. Line a 12-
2. Melt the butter in a medium saucepan over medium heat. Stir in the peanut butter, graham cracker crumbs, and sugar and mix well.
3. Remove the mixture from the heat. Evenly divide the mixture, approximately 2 tablespoons per cup, among the muffin cups.
4. Combine the chocolate and milk in another pan. Stir over medium heat until the chocolate has melted.
5. Spoon the chocolate evenly over the peanut butter mixture. Top with chopped nuts.
6. Place chocolate peanut butter cups in the freezer, until firm about 60 to 75 minutes or at least 2 hours in the refrigerator. Enjoy!
