I can't tell you enough how much my kids love pasta. When I say “love”, I really mean they want pasta for breakfast, lunch and dinner. And, kids being kids, they always ask for the impossible – the kids want pasta in their desserts!
So, I took an old-
So, what do you say? Let's have pasta for dessert!
(serves 4 to 6)
Ingredients:
125 grams pasta shells
600 ml plus 3 tablespoons low-
2 tablespoons cocoa powder
2 tablespoons brown sugar
½ cup raisins
¼ cup chopped nuts
2 eggs, separated
125 grams granulated sugar
Place pasta shells and 600 ml milk in a saucepan, bring to a boil.
Lower heat and let the pasta simmer for about 18 to 20 minutes, stirring constantly.
In a bowl, combine cocoa powder with 3 tablespoons milk and brown sugar. Mix well to form a smooth paste.
Next, stir the chocolate paste into pasta shells, stirring until pasta/milk mixture starts to boil.
Add egg yolks and half of the granulated sugar. Stir in raisins and chopped nuts.
Pour mixture into a pie dish.
Whisk egg whites with remaining granulated sugar until stiff; place meringue into an icing bag and then pipe a trellis pattern over the pasta shells.
Bake chocolate shell pudding in the center of a 300°F oven for about 15 to 20 minutes or until the meringue is light golden. Serve warm or cold with a scoop of vanilla ice cream. Super yummy!
