Homemade chocolate truffles appeal to young and old alike. They're impressive yet easy to make and fairly inexpensive.
Placed them individually in foil cups, packed in a cute gold box with a red bow, chocolate truffles make a delicious gift from the heart. Not only for Christmas, chocolate truffles are also great for any occasion – Valentines Day, Thanksgiving or birthdays.
(makes 48)
Ingredients:
12 ounces semisweet chocolate chips
6 tablespoons unsalted butter
6 tablespoons powdered
sugar
6 egg yolks
2 tablespoons rum
cocoa powder
Place chocolate chips in the top of a double boiler and bring the water to a boil. Lower the heat and cook until the chocolate melts.
Next, add butter and sugar, stirring until the sugar dissolves. Remove from heat.
Add egg yolks, one at a time, beating with an electric mixer after each addition. Stir in the rum.
Pour mixture into a large bowl. Cover with plastic wrap and allow it to sit for 12 to 24 hours in a cool dry place but do not refrigerate.
Shape the mixture into 1-
Freeze chocolate truffles for about an hour. Store in an airtight container and keep
it in the refrigerator.
