For a coffee-
And, here's one particular coffee cookies recipe which I just can't get enough – coffee kisses – sexy, seductively delicious and insanely addictive!
I love to dunk them in my morning coffee and they're also great when friends come round for a visit. So, spare some time for this recipe. I assure you they're really easy to bake and definitely get you wild!
(makes 12)
Ingredients:
6 ounces self-
pinch of salt
3 ounces butter or margarine
2 ounces castor sugar (superfine granulated)
1 egg yolk
1 teaspoon liquid coffee essence*
Coffee butter icing:
2 ounces butter or margarine
3 ounces sieved icing sugar
1 teaspoon liquid coffee essence*
Preheat oven to 350˚F.
Sieve flour and salt into a large mixing bowl. Rub in butter and stir in sugar.
Mix to a stiff paste with the egg yolk and coffee essence mixed together, a little water or milk may be added if necessary. Using clean hands, bind well.
Divide the mixture into 24; roll each piece into a ball and place them slightly apart on a greased baking sheet. Then flatten them slightly; bake for about 15 to 20 minutes.
Meanwhile, make coffee butter icing. Cream butter and sugar together in a small bowl; add coffee essence.
When coffee cookies are ready, cool on a rack. When cold, use coffee butter icing to sandwich two coffee cookies together. Now, you get coffee kisses!
*Dissolve instant coffee granules in a little hot water.
