Here's a healthy recipe that will guarantee to satisfy any sweet cravings, all under 150 calories per serving.
Ingredients:
4 egg whites
250 grams icing sugar, sifted
2 teaspoons vanilla essence
180 grams desiccated coconut
180 grams cornflakes, lightly crushed
How to make coconut macaroons:
Whisk egg whites until stiff peaks form. Gradually add icing sugar and continue whisking until mixture is of still meringue consistency.
Add vanilla essence, desiccated coconut and crushed cornflakes.
Using two teaspoons, shape a teaspoon of mixture into a ball and drop onto a baking sheet which is prepared with cooking spray.
Bake in a moderately hot oven for about 20 minutes or until firm.
Store coconut macaroons in an air tight container. Makes about 100 small macaroon balls.
