Hands up and confess! How many of you settle for convenience – open a can of soup, add milk, heat and eat? Well, that seems like a perfect solution for most people but if I were you, I rather not slurp that bowl of high sodium, high fat, MSG heavy canned soup.
There's nothing better than homemade soups and for those who lament over lack of time, here's a great basic cream soup mix recipe which can be used to make endless varieties of cream soup.
Not only it's healthy, low sodium, low fat and convenient, it's also economical. The entire cream soup mix makes about nine 10 ¾ ounce cans of cream soup!! Imagine the savings, folks!
So, make a batch ahead and store. Whenever you want a bowl of piping hot cream soup on those chilly nights, just scoop the required amount of dry cream soup mix, add enough water to cook and you're good to go!
(makes 3 cups)
Ingredients:
2 cups instant non-
¾ cup cornstarch
½ cup mashed potato flakes
¼ cup chicken bullion granules or powder
2 tablespoons dried vegetables flakes
1 tablespoon onion powder
½ teaspoon dried thyme
¼ teaspoon garlic powder
¼ teaspoon pepper
Place all ingredients in a food processor or blender, cover and process until vegetables are finely chopped.
Remove and store dry soup mix in an airtight container. Keep in a cool dry place for up to 12 months.
Use as a substitute for one 10¾ ounce can condensed cream soup. To make, blend ⅓ cup dry soup mix with 1¼ cup water in a saucepan until smooth. Bring to a boil for 2 to 3 minutes; whisk occasionally.
To make cream of mushroom soup, add about ½ cup of sauteed sliced mushrooms. For cream of celery soup, add ⅛ teaspoon of celery salt or 1 chopped sauteed celery rib.
Refreshing soup recipe with less than 1 gram of fat. So delicious, yet so simple!
