Don't you agree, sometimes we spend way too much time preparing the main course that we're either too tired or have little time left for an elaborate dessert? Desserts are always welcomed at the dinner table but it doesn't necessarily mean you've to labor over them.
If you're pressed for time and yet want a beautiful dessert to end a meal, this dessert recipe will fit the bill nicely. My version of creme brulee is not only quick to fix but also a healthy low fat variation of the traditional dessert – without cream but absolutely heavenly!
(serves 4)
Ingredients:
10 ounces light vanilla cream, softened
10 ounces low-
¼ cup dried apricots or any other dried fruits
1 tablespoon grated lemon rind
2 to 3 tablespoons demerara sugar or instant coffee granules
Combined softened vanilla ice cream with yogurt, dried apricots and grated lemon rind in a bowl. Spoon into 4 ramekins and refrigerate, uncovered for about 20 to 30 minutes or until needed.
Sprinkle demerara sugar or instant coffee granules over the tops of creme brulee.
Preheat grill to high, grill ramekins near to the heat source until the demerara sugar or coffee granules have melted, about 2 to 3 minutes. Alternatively, serve without grilling for a crunchy topping.
Viola, an elegant dessert in less than 20 minutes! Enjoy....
*For variation, use grated orange rind in place of lemon grind or use a flavored ice cream instead of vanilla ice cream.
