So, you've been eating healthy for six days in a row and then find yourself craving for some sinful desserts? Well, I'm with you. I think as long as we don't overboard and get carried away with our occasional indulgences, we can always burn off those extra calories the next day, right?
Today, we're doing neither cakes nor bakes, let's make ourselves some lip-
You can have the fritters on their own as snacks or if you can afford the calories, sprinkle icing sugar over papaya fritters and serve with two scoops of rum raisin ice cream for dessert – they taste and look gorgeous!
This recipe also works well for bananas but I prefer papayas as they are low in carbs and calories so I feel less guilty about seconds.
(serves 6)
Ingredients:
1 papaya, slightly underripe
1 teaspoon cinnamon
3 tablespoons rum
oil for deep frying
Beer batter:
150 grams flour
½ teaspoon baking powder
⅛ teaspoon salt
2 eggs, separated
1 tablespoon olive oil
12 tablespoons beer
How to make:
Halve papaya lengthwise and then slice into crescents of about ½ cm thick.
Place papaya slices in a large bowl; add cinnamon and rum. Using a wooden spatula, toss well. Cover and leave aside for about 20 to 30 minutes.
Meanwhile, prepare the batter. Sift flour and baking powder together into a mixing bowl. Add a salt, egg yolks and olive oil. Beat the mixture until smooth.
Gradually stir in beer; whisk egg whites till light and stiff and fold into the flour mixing quickly.
Heat oil in a deep skillet until hot. Dip each papaya slice in beer batter, making sure they're well coated.
Deep fry papaya fritters until golden brown. Remove and drain well on kitchen paper towel. Best enjoyed hot.
