Ahhh....durians...you either love them or hate them. And, when you love them, you'll do anything and everything to fix that durian craving. Durian smoothies, durian cakes and cookies, durian puffs, durian dodols, durian strudels, durian ice creams, durian jams, durian fried rice......I name it, you love it!
Today's durian recipes are the best ever! Once you’ve tried them, you’ll never go back to commercial bakeries again. The durian butter cake, with its deep rich aroma and moist buttery taste is simply ambrosial!
And those easy-
Who knows, you can even start your own home-
Ingredients:
250 grams soft flour
½ teaspoon baking powder
250 grams butter
160 grams sugar
4 eggs, separated
120 grams durian pulp, mashed (get the best durian variety you can afford)
How to make durian butter cake:
Preheat oven to 180°C. Grease a 20 x 6cm square cake tin; line base and sides with greaseproof paper.
In a mixing bowl, sift together soft flour and baking powder. Set aside.
ream butter with sugar until light and fluffy; add egg yolks, one at a time. Beat well and then stir in durian pulp.
Whisk egg whites until stiff and then add into durian mixture.
Fold in sifted flour mixture and mix well.
Pour mixture into prepared cake tin; bake for 50 to 55 minutes, or until a skewer inserted in the center comes out clean.
Leave durian butter cake in tin for 5 minutes before removing to a wire rack to cool completely.
Ingredients:
For the durian puff choux pastry:
220 millilitres water
130 grams butter
pinch of salt
160 grams plain flour, sifted
6 eggs
For the durian puree:
600 grams durian pulp
2 tablespoons milk
2 tablespoons honey
150 grams non-
How to make durian puffs:
To make durian puree, whisk cream till soft peaks form. Set aside.
In a bowl, combine durian pulp, milk and honey. Mix well until smooth.
Add whipping cream; mix until well blended.
Keep refrigerated until ready to use.
Meanwhile, preheat oven to 230°C. Lightly grease and flour baking trays.
To make durian puff choux pastry, pour water, butter and salt into a saucepan. Bring to a boil; pour flour all at once into boiling liquid.
Stir thoroughly until the mixture firms into a ball of dough and does not stick to the sides of the saucepan. Remove from heat; transfer dough into the bowl of an electric mixer.
Using a wooden spoon, push the dough up the sides of the bowl to allow it to cool slightly.
Add eggs, one at a time, mixing at medium speed. Mix until the dough drops from the wooden spoon like a ball.
Drop about 1 teaspoon of dough onto prepared baking tray; space them out slightly apart.
Bake for about 25 minutes; remove from oven. Slit each puff at the side and fill it with durian filling. Serve.
Durian puffs are best enjoyed chilled – the creamy durian puree simply disappears in your mouth – heavenly!
