Durian Mooncake Recipe

 

Impress your family and friends with super delicious home baked durian moon cakes! Easy step-by-step instructions on how to make mooncakes for your mid-autumn festival celebrations.

 

Durian Moon Cake Recipe

To make mooncake pastry, you'll need these ingredients:

300 grams golden syrup

¾ tablespoon alkaline water

95 grams corn oil

400 grams plain flour, sifted

¼ tablespoon thick soy sauce (colouring)


How to make mooncake pastry:
1. Place golden syrup and alkaline water in a mixing bowl; mix both ingredients together.

 

2. Pour in corn oil and soy sauce. Stir to combine. Leave the mixture aside for about 4 hours.

 

3. Fold in flour and mix evenly to form a smooth dough. Leave the dough aside for another 4-5 hours

 

 

Ingredients for the durian filling:

300 grams durian flesh, pureed

500 grams lotus seeds

4 tablespoons plus 500 grams castor sugar

2 tablespoons maltose

How to make durian mooncake filling:
1. Boil lotus seeds in 1.2 litres of water until soft, and then blend into a smooth paste.

 

2. Place 4 tablespoons sugar in your wok, and cook till you get a nice golden brown caramel.

 

3. Add in lotus seed paste and continue to cook till smooth. Add remaining sugar and stir till mixture thickens.

 

4. Add durian puree and maltose. Stir until smooth and does not stick to the centre of your wok. Remove durian filling and allow it to cool overnight.

 

5. Once cooled, divide the durian filling into 100 gram balls.

 

 

Ingredients for egg glaze:

1 egg yolk
1 egg
1 tablespoon water
⅛ teaspoon salt

 

How to make egg glaze for mooncakes:

Combine egg yolk, egg, water and salt in a mall bowl. Mix well and then strain.

How to make homemade durian mooncake:
1. Divide mooncake pastry dough into 45 gram balls.

 

2. Flatten each dough with a rolling pin. Place durian filling in the center and wrap.

 

3. Dust the wooden mooncake mould lightly with flour. Tap out any excess flour.

 

4. Place your durian mooncake into the mould. Gently knock out and transfer mooncakes to a slightly greased tray.

 

5. Bake your homemade durian mooncakes in a preheated oven at 180°C for 10 minutes.

 

6. Remove baking tray from oven and let cool for a while, about 1 minute.

 

7. Brush the top of each durian mooncake with egg glaze and bake them again for 5 minutes or until done.
