My children loves Easter holidays best. There are so many activities to keep them excited in school and at home. They get to play outdoors, have friends over more often and see family members they may not get to see for a while.
Easter is a wonderful for my family to gather around and have a sumptuous meal. To
my children, no Easter treat will be complete without their favourite Easter small
breads – Easter Ducklings.
Ingredients:
500 grams plain flour
30 grams fresh yeast
60 grams caster sugar
250 ml
lukewarm milk
60 grams melted butter
1 egg
A pinch of salt
1 egg yolk, beat to glaze
225
grams strawberry jam or
any other jam/cream cheese
Decoration:
2 tablespoons icing sugar
1 teaspoon lemon juice
raisins
1. Preheat oven to 220 degree Celsius or 425 degrees Fahrenheit.
2. Sifft the flour into a bowl and form a well in the centre.
3. Cream the yeast with a little of the sugar and milk.
4. Pour into well,sprinkle a little flour.
5. Leave to stand for 15 minutes and then add the rest of the sugar, the melted butter,
egg and salt.
6. Mix altogether to a dough and knead well and leave it to rise for an hour.
7. Roll out to 5mm thick. From ⅔ of the dough, cut out circles of 8cm in diameter.
8. Brush the edges of the circles with a beaten egg, spoon a little strawberry jam
in the centre and place 2 circles together until all are used.
9. From the rest of the dough, cut out smaller rounds for the heads and ovals for
the beaks.
10. Now, attach the heads to the body and the beaks to the head with beaten egg yolk.
11. Place on a greased baking tray and leave place for about 15 minutes.
12. Brush the ducklings with egg yolks and bake for 15 minutes.
13. Blend the sifted icing sugar with lemon juice. Stick the raisins on blobs of icing sugar to form eyes and decorate the little ducklings with crystallised flowers, if you desired.
