Easter Sugar Cookies

By Kate Miller

Sugar cookies are the snack to trump all other Easter cookies. These melt-in-your-mouth homemade cookies with vibrant colors, topped with candies are really fun to eat.

You can even make sugar cookies for any occasion – Valentine's Day or Christmas – using different cookie cutters. Sugar cookies, plain or decorated, make stylish yet affordable gifts for family and friends too.

Sugar Cookies Recipe

Ingredients

¾ cup butter, softened

¾ cup white sugar

1 egg

1 teaspoon vanilla extract

½ teaspoon almond extract

2 cups flour

1 teaspoon baking powder

¼ teaspoon salt

3 to 5 drops food coloring (pink, green, blue or yellow)

How to make sugar cookies:

In a large mixing bowl, cream together butter and sugar until light and fluffy. Beat in egg. Add vanilla extract, almond extract and food coloring.

Stir remaining ingredients gradually into the batter. Cover and refrigerate for 1 hour or until easy to handle.

On a floured surface, roll the dough to about ⅛-inch thickness. With an oval cookie cutter, cut egg shapes.

Place on lightly greased baking sheets, leaving about 1-inch space in between cookies. If you want to make a hole for a ribbon, press a drinking straw ½ inch from the top of each cookie.

Bake at 375°F for 8 to 10 minutes or until lightly browned. Remove cookies to wire racks to cool completely before you decorate with food colors.

To decorate sugar cookies, mix 1 egg yolk and ¼ teaspoon water. Divide egg mixture among several custard cups. Tint each with different food color to make bright colors. If "paint" thickens, dilute with a few drops of water.

Using small paint brushes, paint designs on sugar cookies. You can also use chocolate mints on top.

Thread lengths of coloring ribbon (between 6 to 8 inches) through holes and tie ends in a bow. Hang sugar cookies on an Easter tree if desired.
