Easy No Bake Chocolate Recipes

By Kate Miller

Every woman loves a box of chocolates on Valentine's day. Give her anything chocolatey and her eyes will brighten up instantly. You don't have to splurge on incredibly overpriced chocolates to wow your sweetie this Valentine. With these super easy, no-bake chocolate treats, who needs a fancy box of chocolates!

Chocolate-Dipped Potato Chips
4 ounces semisweet chocolate, melted*

24 ridged potato chips

½ teaspoon coarse sea salt

Partially dip each potato chip in the melted chocolate. Place them on a non-stick baking sheet. Sprinkle the top lightly with salt. Pop them in the fridge, chill for 20 to 30 minutes or until chocolate hardens.

No-Bake Marshmallow Chocolate Fudge
12 ounces semisweet chocolate, chopped

1½ (14-ounce) cans sweetened condensed milk

1 cup mini marshmallows

Heat the milk and pour over the chocolate. Stir until melted and then add the mini marshmallows. Pour mixture into a parchment-lined 8-inch square baking pan. Refrigerate overnight until firm, about 12 hours. Cut into desired size.

Peanut Butter Chocolate Buckeyes

6 ounces semisweet chocolate, melted*

1 cup creamy peanut butter

4 tablespoons unsalted butter, melted

2 cups confectioners' sugar

Combine the peanut butter, butter, and sugar. Form into tablespoon-size balls. Place on a non-stick baking sheet. Freeze for 10 minutes. Partially dip each ball in the chocolate, return to the baking sheet, and refrigerate until firm, 25 to 35 minutes.

* To melt chocolate, place coarsely chopped chocolate in a microwave-safe container and microwave at medium for 1½ to 4 minutes, until the chocolate turns shiny. Remove and stir the chocolate until completely melted.

Alternatively, place coarsely chopped chocolate in the top of a double boiler over hot, not simmering, water. Melt the chocolate, stirring until smooth. Remove the top part of the double boiler from the bottom.
