All my kids love cheesecakes but two of them are asthmatic and prone to eczema. So, I have to be very careful when choosing treats for them. I make sure they avoid eggs, artificial colorings and preservatives as these may trigger allergies.
With store-
You will need these ingredients
Base:
90 grams digestive biscuits*
125 grams butter, softened
Filling:
200 grams sugar
250 grams cream cheese
100 milliliters water
1 envelope unflavored gelatin
200 grams sour cream
1 cup strawberries, hulled and halved
1. Crush digestive biscuits and mix with butter. Spread mixture on a 22½ cm diameter aluminum foil tray and press down firmly to form a base.
2. Chill cheesecake base in the refrigerator.
3. Meanwhile, prepare the cheesecake filling. In a large mixing bowl, mix together sugar and cream cheese.
4. Boil water in a saucepan, add gelatine and reduce heat to low. Stir continuously until gelatine dissolves. When the mixture begins to bubble, add sugar and cream cheese. Continue to stir over low heat, add sour cream and stir again until mixture boils.
5. Transfer mixture onto chilled cheesecake base. Chill cheesecake in the refrigerator until set, about 3 to 4 hours. Garnish with strawberry halves before serving. Enjoy!
