After indulging in a multitude of dietary sins over the holiday season, I'd would usually go "light" for a couple of days to rid myself of the guilt feelings. And, what better way to achieve that is to have a hearty bowl of soup with plenty of vegetables thrown in.
Soups fill you up without extra calories and are also great for increasing fluid
intake. Here's a tasty fat-
(serves 2)
Ingredients:
1 cup cabbage, shredded
1 carrot, sliced
1 stalk celery, sliced
1 baby leek, sliced
3
cups vegetable stock
1 bay leaf
½ cup Cannellini beans
salt and black pepper, to
taste
cilantro, to garnish
Pour vegetable stock into a large pot, throw in the bay leaf and boil. Once it starts to boil, add leek, celery, and carrots.
Continue boiling for 5 to 7 minutes.
Throw in cabbage and beans. Stir, and let vegetable soup boil for about an additional 3 to 5 minutes until the vegetables are soft.
Season vegetable soup with salt and pepper, garnish with cilantro and serve hot. Enjoy!
*You can also modify the vegetable soup recipe with your favorite vegetables or add small pasta shells or potatoes.
