Easy Family Dinners – Fried Chicken Drumsticks in Ginger Gravy

Tell me who doesn't like fried chicken? Though not so healthy, almost everyone I know simply can't resist a piece of juicy crispy fried chicken. For many people, fried chicken is a summer must-have. You can have it as main course, together with cream gravy and hot biscuits, or take it along on a picnic, accompanied with potato salad.

 

Well, today's fried chicken recipe is deliciously different! It's fried chicken with an Asian twist; we're going to marinate the chicken with fresh ginger, soy sauce and sherry, deep-fry until golden brown and serve with an extra spicy ginger gravy on the side.

 

It's a delicious, quick and easy, cheap and cheery meal for the whole family.

 

Fried Boneless Chicken Drumsticks with Ginger Gravy  Recipe

(serves 4)

 

Ingredients:

4 pieces boneless chicken drumsticks

1½ tablespoons sesame oil

1 tablespoon soy sauce

1 teaspoon sugar

canola oil, for frying

 

Ginger gravy:

2 tablespoons soy sauce

2-inch fresh ginger, crushed

1 tablespoon chili sauce

2 tablespoons sherry

 

Garnish:

1 cup shredded cabbage

cherry tomatoes

1 carrot, shredded

 

 

How to cook:

Marinate chicken with ingredients for the gravy; leave aside for 30 minutes or more. Remove and reserve marinade.

 

Heat oil in a deep skillet until hot, fry chicken until light brown over medium heat. Remove chicken and drain oil.

 

Place 1 tablespoon soy sauce, sugar and the reserved marinade in skillet. Heat over low heat until sugar melts.

 

Garnish serving platter with cabbage, carrot and tomatoes.

 

Cut chicken into thick pieces, and place in the middle of serving plate. Pour gravy onto chicken, and flavor with hot sesame oil just before serving. Enjoy!
