This green tea cake is really stupendous. Its light refreshing matcha taste and almonds are really the perfect combination of flavors. A truly pleasant summer cake that's sure to excite any jaded palate.
The green tea cake has a nice soft, moist and airy texture with a lovely chewy bite. The flavor lingers and builds on your tongue after the cake is gone.
I've tried a few recipes before, and this green tea cake recipe is by far the best and very easy to make. The thing to remember is get a really good matcha powder (not sencha). It's pricey but worth the money. I also use ground almond in this green tea cake because my husband and children love a nutty flavor, but feel free to stir in some red bean paste (available in cans at most Asian food markets) for a classic Japanese taste.
Ingredients:
4 eggs
1¾ cups flour
1½ cups sugar
¾ cup butter, softened
2 teaspoons green tea powder
1 teaspoon almond, finely crushed (optional)
1. Place butter and sugar in a bowl. Stir until sugar is dissolved.
2. Add eggs to mixture, one at a time. Mix well.
3. Sift flour and green tea powder together in a bowl.
4. Add to butter mixture, and add ground almond if you're using.
5. Pour mixture into a lined medium loaf pan. You can also use greased 3 mini loaf pans and make individual small cakes instead.
