If you love sweet potato and usually have them whole and roasted, allow me to tempt you with a super delicious and really interesting twist – green tea mashed sweet potato balls.
Lightly perfumed with green tea fragrance and garnished with crunchy walnuts, these
cute yet easy-
Its beautiful emerald color makes an elegant dessert for entertaining your loved ones. You can also enjoy them as a light lunch.
(makes 20)
Ingredients:
1⅔ lbs sweet potatoes, including skin (you should get about 1lb when mashed)
1 cup sugar (or slightly less)
a few drops vanilla extract
green tea powder
1 cup walnuts, coarsely chopped
1. Wash sweet potatoes and cut them into ¾" thick slices.
2. Pare thickly and soak in water for 25-
3. Place sweet potato slices on a rack into a hot steamer with boiling water. Steam until tender.
4. Strain through a sieve whit they are still warm.
5. Place mashed sweet potato and sugar in a large saucepan. Cook over low heat, stirring continuously, until smooth.
6. Remove the saucepan from heat and allow to cool.
7. Dissolve powered green tea in hot water, accordingly to package instructions.
8. Add green tea mixture and vanilla extract to sweet potato. Stir well to combine.
9. Shape into balls or ovals. Garnish with chopped walnuts. Enjoy!
