Today, let's do something different, let's make hairy gourd and vermicelli in clay pot.
Vermicelli, also known as glass noodles or cellophane noodles are thin, slippery, translucent noodles made from mung beans and since they've little or no taste, they'll absorb flavors of the ingredients that are cooked with, in this case, the natural sweetness of dried shrimps and hairy gourd.
Vermicelli is an excellent alternative to rice – great on days when you want something not so heavy but yet filling.
(serves 2)
Ingredients:
1 medium hairy gourd, about 300 grams
50 grams dried shrimps
60 grams mung bean vermicelli
½ cup cooking oil
1 tablespoon chopped garlic
salt to taste
1 tablespoon light soy sauce
1 cup chicken stock
Soak dried prawns in water until softened, about 10 minutes and drain.
Soften vermicelli in water for 10 minutes and cut into halves. Drain well.
Remove skin of the hairy gourd and slant cut into ½ cm slices. Then cut the slices into ½ cm strips.
Heat clay pot with oil, add garlic and fry until light brown.
Add dried shrimps and stir fry until fragrant. Add in hairy gourd, salt, light soy sauce and chicken stock.
Cover clay pot and let ingredients cook over high flame for 3 minutes. Serve hot in clay pot.
An appetizing dish to have on a chilly day. You can use chicken, pork or beef, or even make it vegetarian.
