Easy Leftover Rice Ideas: Rice Crusted Ham and Cheese Quiche

Have you ever wondered what to do with leftover rice? If you're only thinking of Oriental fried rice or Jambalaya (fried rice with a Cajun twist) and nothing else, then you're in for a pleasant surprise!

 

Yup, there' re many other ways to transform leftover rice into a superstar dish and I happen to have a really awesome recipe that will make any mouth water and come back for more.

 

Ham and Cheese Quiche with Rice Crust Recipe

(serves 4)

 

Ingredients:

2½ cups leftover cooked rice
¼ cup butter or margarine, melted
1 cup mushrooms, sliced
1½ cups fully cooked ham, finely chopped
1 cup shredded cheddar cheese
1 cup shredded Swiss cheese
a few drops hot pepper sauce
3 eggs
½ cup milk
⅛ teaspoon paprika
⅛ teaspoon garlic powder
⅛ teaspoon onion powder

fresh parsley, chopped

 

 

How to make:

Using the back of a spoon, press leftover rice into a greased 9-inch pie plate to form a crust. Brushed the rice with butter and bake for 3 minutes in a 350°F oven. Remove.

 

Combine mushroom, ham, cheddar cheese, Swiss cheese and hot pepper sauce in a bowl; pour over rice.

Beat eggs, milk, paprika, garlic powder and onion powder; pour over ham mixture.

Sprinkle chopped parsley and bake quiche for 30 minutes or until a knife inserted near the center comes out clean. Let stand for 5 to 10 minutes before slicing.
 

It's sooo GOOD......hey, don't take my word for it....you gotta try it out yourself!
