As a working mom with two young kids, I've little time in the kitchen. That’s why
I'm constantly searching for quick and easy family recipes that require minimum preparation
time. I like recipes that can be whipped up in a hurry and if there's not much clean-
Casserole recipes fit very nicely in a busy life; you can thrown in whatever you've in your pantry and yet cook a delicious meal to satisfy the whole family. Besides, casserole meals are value for money and also great for sneaking in veggies.
(serves 4)
Ingredients:
2 pounds ground beef
1 cup chopped onion
½ cup diced carrot
8 cups shredded cabbage
1 large bell pepper
1 cup chopped celery
3 cloves garlic, crushed
1 cup uncooked brown rice
salt and pepper, to taste

How to cook:
Saute beef and onion over medium heat for about 8 to 10 minutes until brown. Drain to remove excess fat and then stir in remaining ingredients.
Place in crock pot and cook on low setting for 6 to 8 hours. Alternatively, spoon

* You can use turkey in place of beef, and add garlic powder, chili powder or any other seasonings you desire.
And, that's one nutritious dinner – maximum taste, minimum effort! YUM!
