Eggs are excellent healthy breakfast food for many reasons. As a great source of all-natural, high-quality protein, eggs can help keep you full longer so you're less likely to snack later in the day. And, being one of the most versatile food known to man, eggs can be cooked in various ways for a good hearty breakfast.

Ways to Cook Eggs for Breakfast

1. Scrambled Eggs with Extras

Sliced mushrooms, diced tomatoes, peppers or diced bacon make your plain scrambled eggs come alive. These extra ingredients give the eggs more texture and nutrition with every bite. Serve with a slice of wholegrain toast for even more filling power.

 

2. Poached Egg and Yogurt

A wholesome Turkish breakfast recipe that contains two very healthy ingredients – eggs and yogurt. Bring 5 cups water to a boil. Add 2 tablespoons vinegar and ¼ teaspoon salt. Reduce to medium heat once water starts to boil.

 

Break eggs, one at a time in small bowl and glide into hot water. Cook for 3-4 minutes, then remove with a slotted spoon. Combine ½ cup low fat yogurt and 1 clove minced garlic in a bowl. Pour the yogurt mixture over eggs.

 

Heat ½ tablespoon butter in a non-stick skillet until hot, add 1 teaspoon paprika. Stir for 30 seconds. Pour over the eggs and yogurt. Sprinkle 1 teaspoon mint flakes.

 

 

3. Egg and Bagel

Slice a bagel in half and toast them lightly. Melt butter in a nonstick skillet on medium-low heat. Cook eggs for 1-2 minutes, on both sides. Top with Cheddar cheese, and turn off heat.

Place egg on one of the bottom halves of the toasted bagels and top with the corresponding top.

 

 

4. Egg and Avocado Sandwich

 

Combine 1 hardboiled egg (diced), ½ avocado (mashed), 1 tablespoon low fat mayonnaise in a bowl. Season with salt and pepper to taste. Serve in between toasted wholemeal bread for a nutritious and delicious breakfast or lunch.

 

 

5. Eggs and Black Beans

 

Make a tasty breakfast with canned black beans, eggs, herbs and spices. Combine drained 1 can black beans, 1 teaspoon cumin, ⅛ teaspoon chili powder, and ½ teaspoon oregano. Mix well, and then heat beans until hot.

Cook eggs until the whites have set. If you want your eggs without a runny yolk, you can also scramble or poach them.

 

Add eggs to bean mixture, and toss well. Season with salt and pepper, to taste.
