Homemade Farmers Cheese

I didn't know it was possible to make cheese at home until a friend encourage me to try out this homemade farmers cheese recipe.

There's no need for special equipment to make farmer cheese; it's incredibly easy and really fun! It only requires a few ingredients from the grocery store, and you get lighter, fresher, and very tasty soft white cheese.

You can also even add herbs, spices, dried garlic or onion to flavor your homemade white cheese.

If you've kids, making your own cheese is also an excellent way to get them interested in cooking.

 

Farmers Cheese Recipe
 

Ingredients

1 quart fresh whole milk (2 pints)

1 cup buttermilk

2 teaspoons lemon juice or white vinegar

¾ teaspoon salt

 

 

How to make farmer cheese

1. Pour milk into a large pot. Heat to 175 degrees or until you see small bubbles forming around the edges. Stir occasionally to keep the milk from burning on the bottom of the pot.

 

2. Turn off the heat. Stir in buttermilk and lemon juice. The milk will begin to cuddle, but don't worry. The acidity in the lemon will cause the milk to form curds. If your milk doesn't curdle within 30 seconds, add 1 teaspoon lemon juice.

 

3. Line a sieve with a double layer of muslin cloth. Pour the curdled milk through cloth to catch curds. The yellowish green white liquid (whey) will drain away, leaving you with thicker, milky white curds (farmer cheese).

 

4. After 10 minutes, remove the muslin and squeeze out as much liquid as you can. Alternatively, tie the top with twine, and attach to a wooden spoon. Suspend over a deep bowl to let your cheese drain for another 20-30 minutes.

 

5. Transfer the cheese into a bowl, and break it up. Mix in salt and flavorings, if you're using.

 

6. Wrap with plastic or place in an air tight container. Store homemade white cheese in the refrigerator. Enjoy!
