Homemade Vanilla Ice Cream Recipe

By Kate Miller

You've to admit it. Ice cream makes you happy. And, you'll be happier if I tell you how to make ice cream at home without an ice cream maker for pennies on the dollar!

Store bought varieties, though convenient, can be tooth-achingly sweet and boring. Homemade ice cream gives you the flexibility to control sugar amount, add interesting flavors and create super smooth textures.

Making your own ice cream is not as hard as you think. Actually it's so easy that I churn them up with my kids. Don't try this recipe unless you want the creamiest, smoothest and tastiest homemade ice cream! You might want to omit the liqueur if you want a kid-friendly version.

Vanilla Ice Cream Recipe

(makes about 6 servings)

Ingredients:

4 egg yolks

1¼ cups sugar

1 tablespoon cornstarch

2 cups warm milk

1 cup heavy cream

vanilla extract and desired liqueur (coffee or rum tastes heavenly)

How to make homemade ice cream

1. Combine egg yolks, sugar, cornstarch and milk in a saucepan. Stir to blend well.

2. Cook the mixture over low heat, until slightly thickened.

3. Remove the saucepan from heat. Place it in ice water to cool.

4. Add vanilla extract and desired liqueur.

5. Whip the cream by placing its bowl in ice water.

6. Fold whipped cream into egg yolk mixture.

7. Pour into a pan (metal ones are the best because it firms faster).  Place it in the freezer.

8. When the mixture starts to freeze at the edges but not fully through the center, stir with a spoon. Flatten the surface and return to freezer.

9. You want to repeat 3-4 times to get a really smooth texture. Put the mixture back to the freezer and freeze for a final time until it's ready to serve.

10. Serve your homemade ice cream with raspberries and garnish with fresh whipped cream. Enjoy!
