Hands up and confess, those of you who stare mouth agape at the Japanese Teppanyaki chef deftly mixing and tossing up rice and then adding a handful of finely chopped garlic to give you a tasty dish of fragrant fried rice, Japanese style?
The good news is, you don't have to do that anymore. This Japanese recipe is really awesome for busy people (especially for busy moms with young kids) on a budget. It's cheap and cheery, quick and easy, and also a great idea to use leftover rice.
Moreover, Japanese fried rice is so versatile – you can add diced pork, ham or chicken
for a quick one-
(serves 4 to 6)
Ingredients:
3 tablespoons canola oil
4 cloves garlic, finely chopped
6 bowls cooked Japanese (short-
1 teaspoon chicken bouillon powder
2 tablespoon soy sauce
1 handful dried nori
seaweed, sliced
1 handful bonito flakes
1 handful chopped green shallots
Heat a large skillet or wok until smoking hot. Add canola oil and heat until it shimmers.
Add garlic and fry until fragrant.
Add the rice and bouillon powder; toss well.
Next, add soy sauce and mix vigorously until the rice grains are evenly coated.
Remove from heat.
Serve the Japanese fried rice in bowls and sprinkle with seaweed, bonito flakes and some green shallots. Serve immediately.
*Freshly cooked rice becomes sticky when fried. Instead, use leftover rice or three parts uncooked rice to four parts water to cook Japanese rice for best results.
