If you enjoy eating Korean kimchi, then you will fall in love with this flavorful kimchi inspired red and white cabbage salad.
Using only a few common ingredients, this easy-
The cabbage salad also makes a pretty presentation on your table with its array of
vibrant colors. Moderately spicy; great as a start-
(serves 4)
Ingredients:
1 cup white cabbage, finely sliced (I use napa. You can also use whatever you have)
1 cup red cabbage, finely sliced
½ cucumber, finely sliced (I leave thin strips of skin between the peeled areas for color and texture)
1 teaspoon Kosher salt (or sea salt)
2 cloves garlic
1 small knob fresh ginger
1 fresh red chilli, finely chopped
1 red capsicum
1 carrot
2 tablespoons rice vinegar (or cider vinegar)
1 teaspoon sesame oil (optional)
roasted sesame seeds
How to make:
1. Combine white cabbage, red cabbage and cucumber in a bowl. Add sea salt, and rub all ingredients together.
2. Set it aside for 10-
3. Finely chop the garlic, and minced the ginger.
4. Slice chili, capsicum, and carrot into thin strips.
5. Drain the vegetables. Lightly squeeze out as much liquid as possible.
6. Add remaining ingredients and toss well. Serve.
7. You can also chill the cabbage salad until ready to serve. Enjoy!
