Easy Desserts – Kiwi Fruit in Lemongrass Syrup

We talked so much about the health benefits of lemon grass and why it is good for
your overall well-being. Now, let's see how you can incorporate it in your meals.
People usually associate lemon grass with Asian cooking, but I like to use lemongrass
in my desserts.
Today's dessert recipe is simple yet it gives a sophisticated and refreshing touch.
To accent the lemony aroma of lemongrass, I also used two kinds of kiwifruits – green
The green kiwi fruit is tangy and has a citrus-like flavor while the golden (or yellow)
variety tastes sweeter with a light hint of mango flavor. Both are full of Vitamin
C and contain potassium, magnesium and fiber.
If you want to stay slim eating desserts, kiwifruit is a good fruit to enjoy because
it's low in carbs. You really wouldn't want to miss this easy-to-make dessert recipe.
Each spoonful is bursting with mouth-watering flavors and vibrant colors. This is
by far the healthiest and best refreshing treat for the dog days of summer!
Kiwifruit in Lemon Grass Syrup Recipe
3 stalks lemongrass, lightly crushed
½ lemon rind, shredded
1 slice ginger, crushed
3 sprigs fresh mint
½ cup sugar, more if you like
3 cups water
2 golden kiwifruits
2 green kiwifruits
12 fresh strawberries, hulled and sliced
How to make kiwi dessert
1. In a large pot, place lemongrass, lemon rind, ginger, mint, sugar and water. Bring
it to a boil and then reduce heat.
2. Allow the mixture to simmer over low heat for about 25-30 minutes.
3. Leave to cool, cover and chill in the refrigerator.
4. Peel kiwifruits and cut into thick slices.
5. Fill 4 single-serve bowls with green and gold kiwifruits, alternate them so as
to make a colorful presentation. Place strawberry slices on top of kiwifruits.
6. Strain the lemongrass syrup through a fine sieve. Pour over fruits and serve dessert
