Bokkeumbap, an easy and appetizing kimchi fried rice dish. Perfect for a quick lunch or dinner. Great place to use leftover rice.

Korean Kimchi Fried Rice (Bokkeumbap) Recipe

(serves 4)

 

Ingredients:

7 ounces minced pork

4 teaspoons soy sauce

1-2 tablespoons sesame oil

1 teaspoon Korean chili powder (gochugaru)

1½ teaspoons cooking oil

1 cup kimchi, chopped

4 cloves garlic, finely chopped

1 medium onion, peeled and chopped

1 medium carrot, peeled and cut into small pieces

4 cups cold rice (you can use leftover rice to make bokkumbap)

 

How to cook kimchee fried rice:

1. Place pork, soy sauce, sesame oil and chili powder in a bowl. Mix all ingredients thoroughly to marinate.

 

2. Add cooking oil to a wok, and heat over high flame until very hot. Add pork and stir-fry for 2-3 minutes, or until the meat starts to brown.

 

3. Lower the heat to medium. Tip in kimchi, garlic, onion and carrot. Stir-fry for 3 minutes.

 

4. Add rice and continue to stir fry for a few more minutes, making sure the rice grains are separated and heated through.

 

5. Dish up your Korean kimchi fried rice and divide equally into 4 serving plates. Serve immediately. Enjoy!
