Healthy Low Fat Snack Recipes! Lemon Baked Potatoes

Many of us have a love-hate relationship with potatoes. We love potatoes no matter how they're prepared but at the same time, afraid to eat them.

 

Ever since low carb diets stole the limelight, starchy carbs particularly potatoes, rice, breads and pasta are shunned. If you're like me, crave for potatoes at times, then you must really try one of my great tasting low fat potato recipes.

 

These lemon baked potatoes are easy to make, budget-friendly, nutritious and make awesome healthy snacks for the whole family.  And, I promise you, they're super duper low fat!

Lemon Baked Potatoes Recipe

(serves 4)

 

Ingredients:

12 baby red or yukon gold potatoes

4 tablespoons lemon juice

2 tablespoons extra virgin olive oil

3 tablespoons chopped fresh parsley

1½  tablespoons dried basil

1 tablespoon dried oregano

salt and pepper, to taste

 

 

How to cook:

Wash and scrub baby red potatoes clean. Cut them into half or quarters, whichever you prefer.

 

Place remaining ingredients in a large bowl or you can use a large food storage bag; add potatoes. Toss everything well to combine.

 

Arrange potatoes in baking sheet and place in a preheated oven 350°F. Bake for about 30 minutes or until potatoes are soft when pricked with a fork. Enjoy!
