When it come to choosing healthy meats for cooking, I never shy away from chicken
breast. Chicken breast is an excellent lean protein and pretty versatile – you can

Now, the trick to a tender, juicy, succulent chicken breast meat is in the marinade and cooking method. I'm sure many would resort to commercial meat tenderizers, usually used for beef, to soften chicken breast meat.
However, I prefer to marinade chicken breast meat overnight in apple or lemon juice;
it will tenderize the meat and at the same time, gives it a light fruity flavor.
If you're going to deep-
The next trick is not to overcook chicken breast meat. For baking or grilling, be sure not to set the temperature too high. It's best to keep it at medium to medium high.
Additionally, you might want to set the cooking time at a shorter time-
Lemon basil chicken breast is always a big hit with my entire family. It's healthy,
inexpensive, easy to prepare and quick to make. The lemon-
(serves 2 to 4)
Ingredients:
4 boneless chicken breasts, skin and fat removed
juice and zest of 1 lemon
5 tablespoons fresh basil, chopped and divided
4 cloves garlic, minced
4 tablespoons olive oil, divided
salt and pepper to taste
How to cook:
Put chicken breast in a food storage bag. Using a mallet, pound the chicken breast flat until about ½ inch thick.
Then add 2 tablespoon olive oil, lemon juice, lemon zest, 4½ tablespoons fresh basil, salt, garlic, salt and pepper to taste.
Mix well and leave to marinate in the refrigerator for 1 to 2 hours. Remove chicken from refrigerator 10 minutes before cooking.
Heat remaining olive oil in a large grill pan or skillet over medium heat. Once hot, cook chicken breasts for 4 minutes and then flip.
Cook for another 3 to 4 minutes or until juices run clear.
Remove from heat and let the chicken breast "sit" for at least 5 minutes before serving. Garnish with remaining fresh basil and extra lemon. Delish!
