Easy Chinese Recipes – Vegetarian Lotus Root Stir-Fry

If asked to prepare a dish with lotus root, how would you cook it? Make lotus root pork ribs soup? Well, that's one way to cook lotus root but did you know lotus root taste superb – mildly sweet and crunchy – in salads, stir-frys, pickled or deep-fried to make lotus root chips?

 

Today's quick and easy recipe is ideal for vegetarians but feel free to add shrimps, lean pork slices or chicken breast meat, if desired.

Vegetarian Lotus Root Stir-Fry Recipe

(serves 4)

 

Ingredients:

1 lotus root, peeled and sliced

1 carrot, peeled and sliced

4 shiitake mushrooms

2 tablespoons oil

1 teaspoon whole peppercorn

2 stalks green onion, chopped

1 small knob ginger, sliced

2 tablespoons vegetarian oyster sauce

1 tablespoon soy sauce

½ teaspoon black vinegar

1 tablespoon cornstarch mixed with 1 tablespoon water

 

 

How to cook Chinese-style lotus root

Soak shiitake mushrooms in water until softened. Reserve 3 tablespoon soaking liquid. Remove hard stems and cut into strips. Set aside.

 

Heat oil in a skillet; add peppercorns and ginger slices. Fry til fragrant; remove and discard.

 

Add lotus root slices and stir-fry; add soaking liquid. When the water starts to evaporate, add carrot slices, mushrooms and green onions. Stir-fry for about 2 minutes; add seasonings.

 

Continue to stir-fry for about 5 minutes and thicken sauce with cornstarch mixture. Serve hot with steamed rice.
