I know many of you out there skip breakfast to lose weight or to save calories. Really, you shouldn't. Skipping breakfast makes you grouchy and also cause weight gain – you skip breakfast and then overeat later in the day to compensate. However, when you start the day with a healthy breakfast, you're more likely to choose something healthy or light for lunch.
And, if you don't have time to prepare a breakfast meal, no worries. Try making granola
bars over the weekends and you've a nutritious “grab-
These granola bars are low in calories, low fat, absolutely no sugar, packed with fiber, super easy to make, inexpensive and taste way much better than store bought ones.
Also, the recipe is highly flexible – you can use any combination of dried fruit and nuts such as dates and walnuts or almonds and dried cranberries.
Ingredients:
2 egg whites
1 teaspoon ground cinnamon
¼ teaspoon salt
1 teaspoon vanilla extract
1½ cups rolled oats
⅔ cup chopped raisins
¼ cup chopped pecans
1 tablespoon all-
Preheat oven to 325°F.
Line an 8 x 11-
Place egg white, ground cinnamon, salt and vanilla extract in a large bowl. Whisk well.
Stir in oats, raisins, pecans and flour.
Spread mixture in the prepared baking tray; level the mixture by pressing on it with the back of a spoon.
Bake for about 30 to 35 minutes or until golden brown.
Allow to cool before cutting into bars with a lightly greased knife. Makes 16 granola bars
