Pasta is never on anyone's mind when it comes to dieting. Ever since the Atkins Diet took the world by storm, pasta has been shamed for its notoriously high carb content. For the record, there’s nothing wrong with carbs but carbs can make you gain weight only if you eat in excess.
So, don't blame this guy for the extra pounds around your belly! To all pasta-
It's lip smacking good, quick to prepare and I assure you, super light with less fat. Even with a healthy twist, it's still retains the traditional flavor. Hey, can you smell it from my kitchen?
(serves 6)
Ingredients:
500 grams fettuccine
1 tablespoon olive oil
4 rashers turkey bacon, rind and fat removed, and finely sliced or
200 grams lean leg ham, finely sliced
1 small green capsicum, finely diced
1 onion, thinly sliced
150 grams button mushrooms, thinly sliced
2 tablespoons plain flour
½ teaspoon freshly ground black pepper
¼ teapsoon ground nutmeg
2 cups skim milk
¼ cup Parmigiano-
¼ cup American Romano cheese
Place a large saucepan of water on the stove over high heat. Bring to a boil and, when at a rolling boil, add pasta together with a pinch of salt. Cook pasta for 12 minutes or until al dente. Drain pasta and set aside.
Heat olive oil in a skillet over medium heat. Add turkey bacon, capsicum, onion and mushrooms. Cook for about 2 to 3 minutes, or until the turkey bacon is crisp.
Stir in plain flour, ground black pepper and nutmeg. Cook for 1 minute and then remove from heat. Gradually add the skim milk.
Return skillet to heat and stir continuously until the sauce thickens. Bring to a boil and cook for a further 3 to 4 minutes.
Stir the sauce through the pasta and serve carbonara sprinkled with Parmigiano-
