Even if you're dieting, meals don't have to be boring, bland and unappetizing. Low calorie or low fat meals can be just as tasty and enjoyable as regular meals.
When cooking low fat meals, nothing can be healthier than chicken breast meat, which is high in protein with only 124 calories per serving.
However, the problem is, chicken breast meat (especially boneless and skinless) can be dry, tough and stringy when not cooked properly. The trick to moist tender flavorful chicken breast is to cook it as quickly as possibly or to brine it before cooking.
To brine, place chicken breasts in a salt and water solution (3 tablespoons salt dissolved in 4 cups water), cover and refrigerate for about 1 hour. When ready to cook, remove chicken breast from the brine, rinse under cold running water, and cook.
Today's low fat recipe features baked skinless chicken breasts with a classic cheesy herb filling that is both tasty and satisfying. It’s healthy and very very easy!
(serves 4)
Ingredients:
4 chicken breasts, skinless
200 grams reduced-
2 cups fresh wholemeal breadcrumbs
¼ cup chopped fresh chives
grated rind and juice of 1 lemon
chopped olives
sun-
2 cloves garlic, chopped
¼ teaspoon ground black pepper
For the lemon baste:
grated rind and juice of 2 lemons
1 tablespoon olive oil
Preheat oven to 180°C. Position cooking rack in the center of the oven or on an upper rung.
Spray a baking dish with olive oil cooking spray.
Cut a deep pocked in the side of each chicken breast fillet by inserting the point of a knife into the side of the fillet and cutting through the fillet without coming out the other side.
Crumble feta cheese into a bowl. Add breadcrumbs, chives, lemon rind and juice, olives, tomatoes, garlic and black pepper.
Firmly press stuffing in pockets of the chicken. Transfer to the prepared baking dish.
For the baste, combine lemon rind, juice and olive oil in a bowl. Brush the baste over the chicken breasts.
Bake chicken breasts for 45 minutes, or until cooked through and the filling is firm. Baste occasionally to keep the outside moist.
Serve baked chicken breasts with salad. Enjoy without guilt!
