Made with real lime juice, this refreshingly smooth key lime cheesecake oozes a tangy citrus flavor and is as satisfying as it is attractive. It's sure to make your dullest dieting day feel great! And, who knew low fat cheesecakes could taste sooo darn good?
Ingredients:
1 (9 inch) reduced fat graham cracker pie crust
2 (8 ounce) packages reduced fat cream
cheese
½ cup white sugar (you may want to use Splenda)
1½ tablespoons all purpose flour
2½
tablespoons lime juice (you can use lemon juice)
½ cup egg substitute
1 (8 ounce) container
nonfat lime yogurt (feel free to play around with any flavors you like)
1. Preheat your oven to 350˚F.
2. Place cream cheese and sugar in a large mixing bowl, beat until smooth. Add flour, lime juice and egg substitute.
3. Stir in yogurt gradually.
4. Pour the mixture into pie crust.
5. Bake for about 50 to 60 minutes, or until the filling is set. Turn off your oven and leave the cake inside for 1 hour, with the door cracked. By doing so, the cheesecake will firm up and not crack.
6. Let it cool completely and then chill for at least 4 hours before serving.
If you want to dress up the cake, you can decorate it with lime or lemon rind, strawberry halves, or mango slices before placing the cheesecake in the refrigerator.
Then make the gelatin according to the instructions on its package. When the it cools to room temperature, take the cake out of the fridge and pour over the top of the fruits. Chill your low fat key lime cheesecake until set. Enjoy!
