Mac and Cheese is undoubtedly America's favorite comfort food but it is no way a low-fat dish. To make a lighter healthy Mac and Cheese without sacrificing its taste, the secret is to use low-fat milk in place of whole milk, reduce or even remove butter completely and use less cheddar cheese or use low-fat varieties.

 

Here’s a low-fat Mac and Cheese recipe that is just as good – if not better than – the old-fashioned version; your family will never guess you took out almost 10 grams of fat from it and your kids will love you for this! And, did I mention it’s super easy and quick?

Low-Fat Mac and Cheese Recipe

(serves 4)

1 cup fat-free milk

1¼ cups shredded low-fat Cheddar cheese

⅔ cup low-fat shredded monterey jack cheese

pepper to taste

2½ cups cooked whole wheat elbow macaroni

1 tablespoon grated onion

Paprika

 

 

How to cook low fat macaroni and cheese

1. Place milk, cheeses and pepper in a blender or a food processor, cover and blend until creamy.

2. Pour into a bowl; stir in macaroni and onion.

3. Transfer to a 1½ -quart baking dish coated with nonstick cooking spray.

4. Sprinkle with paprika and then bake, uncovered, at 350°F for 1 hour or until heated through.

Now, go ahead and indulge in your insanely creamy yet low fat mac and cheese! No guilt!!
