I don't know about you but I happen to love muffins and I also prefer to bake my own. Muffins are delicious, easy to bake, easy to eat and great for breakfast or as snacks. It's not true that muffins are unhealthy.
Muffins can be healthy if you use the right ingredients – oatmeal flour, skim milk, egg substitute, less sugar or sugar substitute, olive oil in place of butter and toss in dried fruits such as raisins, cherries, cranberries, blueberries or pineapples for added fiber. And, if you like, add a handful of your favorite nuts – almonds, walnuts, pecans, pistachios – for that extra crunch.
What I have here is a healthy low fat muffin recipe. Each muffin is less than 150 calories and I tell you, these muffins are perfect for people on diet, they are sooo light and moist without compromising on taste. Trust me, you won't even notice the difference! Gosh, these muffins are absolutely delicious......
To make low fat muffins, you'll need these ingredients:
¼ cup olive oil
½ cup sugar
2 egg whites*
1½ cups cake flour
1½ teaspoons baking powder
½
teaspoon salt
¼ teaspoon nutmeg
½ cup skim milk
Topping (optional) :
¼ cup sugar and 1 teaspoon cinnamon
Cream the first 3 ingredients in a mixing bowl; set aside.
Then combine the next 4 ingredients in a separate bowl. Add to creamed mixture alternately with the skim milk.
Get your muffin cups ready, fill the cups about two-
Bake at 325 degrees oven for about 20 to 25 minutes or until golden.
While the muffins are baking, combine sugar and cinnamon in a small bowl.
When the muffins are ready, just roll the tops of the muffins in the sugar mixture while they are hot. These super duper healthy muffins are best served warm or if you've any leftovers, you can always freeze them but make sure you wrap the muffins individually, pop them in a freezer bag and freeze up to 3 weeks.
When you want to eat the muffins, just microwave for about 20 to 25 seconds (depending on your microwave strength) and you have warm tasty muffins in an instant..... Enjoy!
*If using egg substitute, make it an equivalent to 1 egg
