Quick and Easy Desserts! Mango Custard Recipe

By Rebecca Garcia

My husband isn't keen on desserts. He'd rather grab a can of beer from the refrigerator, plonk himself down on the sofa, in front of the telly. How unromantic! But whenever I make desserts with mango, he's always happy and back for seconds! In fact, most guys I know love mangoes.

Mangoes are nutritious, deliciously sweet, require no fancy dressing up and so easy to work with.  So, if your man doesn't want desserts, you gotta try this recipe tonight! He's gonna to love you for it.......

Mango Custard Recipe

(serves 4):

Ingredients:

3 eggs

¼ cup castor sugar

2½ tablespoons plain flour

½ chopped mango

½ cup mango juice

1 cup mango yogurt

How to make:

Preheat oven to 300°F. Lightly grease a 4-cup pie dish.

In a bowl, beat eggs with sugar until thick. Whisk in mango juice, mango yogurt and flour.

Stir in chopped mango and spoon mixture into prepared pie dish.

Place in a large pan half-filled with hot water.

Bake mango custard for about 50 minutes or until a knife inserted near the edge of custard comes out clean.
