If you're a lover of hot and spicy Sichuan cuisine, you wouldn't want to miss mapo tofu (mabo tofu) – silken tofu cubes cooked in fiery hot bean paste topped with minced meat mixture.

 

Mapo tofu is a common dish on most Chinese menus, and can be searingly hot and tongue-numbing or just spicy.

 

In fact, there's a story behind this dish. Once a upon a time in Sichuan, China, there lived a hardworking widow who had no skills except her home cooking. She was too poor to offer dishes using expensive ingredients for sale and could only afford the cheapest at that time – tofu.

 

Little did she know that her humble creation would gain so much popularity that the dish was eventually named after her. Although the widow's real name was forgotten, she was remembered for her one distinctive feature – her pockmarked face. Hence, the name Mapo Tofu (Ma, meaning pockmarked and Po, meaning old woman).

 

Mapo tofu is very quick and easy to make, inexpensive and makes an appetizing dish to have on a chilly day.

 

You can use any type of minced meat such as chicken, pork or beef, or even make it vegetarian. And, don't worry if your family can't tolerate spicy dishes, you can moderate the spiciness according to your taste.

Mapo Tofu (Mabo Tofu) Recipe

(serves 4)

 

Ingredients:

1 box silken tofu, cut into cubes

200 grams minced meat

1 tablespoon hot bean paste

1 clove garlic, minced

½ cup water

2 stalks spring onion, diced

a dash of sesame oil

 

How to cook mapo tofu

1. In a lightly grease non-stick skillet, brown garlic and half of spring onions.

 

2. Add bean paste and minced meat. Add water and stir-fry the sauce until flavors are well blended.

 

3. Add tofu cubes to minced meat mixture and mix gently, being careful not to break up the tofu. Bring to a boil and remove skillet from heat.

 

4. Garnish dish with remaining spring onion and top with a dash of sesame oil. Serve mabo tofu hot and best enjoyed with rice.
