Tiny in size but big on nutrition – that's how I would describe beans. Beans are nutritional powerhouses; they're a healthy source of protein, low in fat and glycemic index (GI) value. Beans also have absolutely no cholesterol and rich in fiber, Vitamins as well as phytochemicals.
Using canned beans in soup recipes are perfect for busy people; you save on cooking time and still achieve a huge pot of flavorful soup that's ready in a snap!
Here's a vegetarian bean soup recipe that's easy, quick, hearty and satisfying all under 20 minutes, and it's wonderful during winter months when you crave for something comforting......without piling on pounds!
(serves 4)
Ingredients:
2 tablespoons olive oil
4 cloves garlic, minced
1 medium onion, diced
4 celery stalks, diced
2 carrots, diced
2 medium potato, diced
3 tomatoes, diced
4 cups vegetables broth
1 bay leaf

1 cup frozen peas
2 cups tomato paste
⅛ teaspoon cumin
1 teaspoon dried oregano
1 teaspoon dried cilantro
salt and pepper, to taste
Heat olive oil in a saucepan, saute garlic and onion until onion is translucent. Then add celery, carrots, potatoes, tomatoes, and vegetable broth.
Add all beans, peas, tomato paste, and herbs. Season soup with salt and pepper to taste; allow to simmer for about 5 to 10 minutes.
Discard the bay leaf and serve hot*. Enjoy bean soup on its own or add a side serve of chunky wholegrain bread to mop up the lovely tomato sauce.....Delish!
